Fish Chowder I work at a fish market part time and bought some lovely haddock and cod since it’s finally soup season! Chowder broth is milk and heavy cream and butter. Potatoes, yellow onions, bay leaves, a pinch of dried thyme leaves, clam juice, fresh chives plus salt and pepper. The secret is to scald the milk with the onions for enhanced flavor. So good!…
