Laphroaig cured Gravlax eggs royale on homemade sourdough English muffins with a sherry hollandaise English muffins made with our own sourdough starter “Medusa”. Laphroaig imparts a lovely smoke and peatiness to the cure. A dry sherry reduction in the base of the hollandaise provides a little acidity to cut through the butter sauce as well as a wonderful depth of flavour.
