Because Apple has a strict policy that won’t allow movie villains to use iPhones or any Apple products in a movie (regardless of the genre). This has been proved many times by various news outlets, such as The Guardian, The Verge, and even Rian Johnson, the director of “Knives Out” (in which the villain wasn’t allowed to use an iPhone).
