I made Ricotta Cavatelli all’Amatriciana My wife insisted on some Talluto Ricotta Cavatelli in the freezer instead of the usual Bucatini, so I obviously acquiesced. Otherwise, it was pretty traditional, with Guanciale, San Marzano’s, Pecorino Romano, pepper, and olive oil drizzled.
